A Ste. Anne’s weekend

Theresa Alberta (Homefront’s resident foodie) and I have been dispatched to Ste. Anne’s Spa—the mecca of all things stress-free—to meet Chef Khushroo Khambata and explore his new bakery. A Vienna-trained master pastry chef, Khambata takes special pleasure in sharing his artistic passion for all things sweet. Overnight spa guests can register for the chef’s complementary demos on Monday, Wednesday and Friday afternoons, so we’re “in like Flint.”
Along with sharing the secret of his success in reinventing the sometimes-bland world of gluten-free, there’s a lesson in learning how to ice a chocolate cake Khambata-style. With sleight-of-hand speed he’s poured the pure cocoa fondant, added a drizzle of cream to create a modern-art effect, prepared a delicate marzipan rose, selected decorative chocolate tiles to garnish and voilà—a designer gateau.
At press time, Chef Khambata had moved on to teach for Cordon Bleu all over the world. Ste. Anne’s team member Chef Dillon Muldoon had stepped in to run the bakery.
