Sauvage

Welcome to Sauvage, ‘nature’s kitchen’ in the booming town of Canmore, Alberta. Restaurant regulars know that it’s Chef Tracy herself who is the mastermind behind each dish and each extraordinary dining experience. Others, here for the ski season, don’t take long to figure it out!

Little’s unique seasonal menus demonstrate her genuine culinary mastery when it comes to truly interpreting the sights, sounds and flavours of the ruggedly beautiful alpine terrain that she’s known and loved since childhood. He wilderness-to-table style showcases vibrant local, found and farmed ingredients steeped in narratives that capture her food philosophies and the deep relationship with the vast and varied Rocky Mountain terrain.

True to her dreams, when she’s not wielding a knife in the kitchen at Sauvage, Chef Little can be found  wild foraging, fishing, hunting and basking in the inspiration of the great outdoors.
