Caymus California Cabernet Sauvignon 2022. California, United States. The 2022 Caymus California Cabernet Sauvignon is a masterclass in balance and boldness. The nose reveals a bouquet of blackberry and lush cassis with a touch of espresso. There’s a hint of baking spices that adds an intriguing complexity, suggesting cinnamon and clove. On the palate, it’s nothing short of indulgent. Full-bodied and rich, the wine unfolds in luxurious waves of black cherry, blueberry, and juicy plum. The tannins are robust yet remarkably smooth, creating a velvety texture that carries through to a long, elegant finish. Food pairings: Braised lamb shanks infused with rosemary and thyme and a side of creamy Parmesan polenta. A wild mushroom and truffle risotto would add an extra touch of luxury. Estate Argyros Santorini Assyrtiko 2022. Santorini P.D.O., Greece. Argyros 2022 is produced from 100% Assyrtiko sourced from the Santorini wine region. Superfresh on the nose and palate, starting off with lemon juice, crisp mineral aromas and flavours textured and mouth-wateringly long on the finish. Grapes were sourced from 70-plus-year-old vines from Santorini’s largest vineyard owner. Brought up in stainless steel tanks with four months on its lees with regular batonnage, it is a fresh and fruity crisp white with backbone. Food pairings: Sea bass and sea bream from the grill. Southbrook Vineyards Triomphe Sparkling Rosé. Ontario V.Q.A., Canada. Southbrook Triomphe Sparkling is a vegan-friendly bubble produced in the Charmat method. Crafted from primarily Chardonnay Musqué with 6% Merlot and 4% Pinot Noir grapes, it is bright and bold with red berry fruit, strawberry, tropical fruits and delicately spiced on the palate.
