Growing up, one of my fondest memories was the après ski my mother used to prepare for us at the chalet. There was nothing better after a day on the slopes than winding down by the fire with some tasty treats.
For this issue we’ve put a twist on some classic winter dishes. My suggestions for hosting your own après ski get-together start with freshly made hot-chocolate with homemade marshmallows. Marshmallows are super easy to make and can be flavoured as you make them. A chocolate or even caramel marshmallow makes a tremendous topping on hot chocolate!
Bringing together two of my favourites, we created a French onion macaroni and Swiss cheese soup that combines all the richness of the soup with macaroni noodles. It’s like chicken noodle and French onion all in one!
Cassoulet was a staple in our home growing up. This classic French dish, which typically combines basic beans and sausage, can be upscaled with ingredients such as sweet potato, carrots, turnip and merguez.
Finally, to finish things off, ordinary cinnamon buns are made extraordinary when you use red velvet as the base. These were (and still are) my dad’s favourite!
